Bramble & Hedge began in a small kitchen apartment in Melbourne in the Spring of 2009, after returning from Beirut in Lebanon where owner, Hayley Crompton, worked as a private chef. Inspired by a visit to the Al-Hamidiyah souk in Damascus, Syria, Crompton witnessed the ancient art of confectionery making, and was forever inspired.
